To disable this functionality entirely, jailbreak with Pwnage Tool, then add the following entry into /etc/hosts:
127.0.0.1 iphone-services.apple.com
I would also recommend using Pwnage to disable the “paranoid wipe” option in the iPhoneOS kernel.
